Why steam over boiling?
Because boiling will wash out some of the flavor.
1. Prepare a pot with about 1 inch of water.
2. Set a bowl or plate in the pot, but do not let your plate sink.
3. If you're preparing fish, place the fish on the plate.
If you're preparing shellfish, don't put it in the pot yet.
4. Cover the pot, put it over the stovetop, and turn the stove on to full power.

5. When the water starts to boil and if you're steaming shellfish, you may now place the shellfish in the bowl or plate in the pot. Replace the lid and allow water to boil again.
